Vegetable Sambar

Ingredients:

2 tbsp sambar powder or tikka masala powder 
2 tomatoes    
3 medium onions 
150g potatoes 
100g carrots 
50g spinach     
50g cabbage 

Serves: 4​

4 green chillies
1 clove of garlic 
1 tsp mustard seeds 
1 tbsp olive oil
Salt and pepper to taste

Preparation

  1. Wash and chop all the vegetables and place in a saucepan.

  2. Add the sambar/masala powder and seasoning.

  3. Cover with water and bring to the boil for 15-20 minutes until the vegetables are cooked.

  4. Heat the oil in a frying pan and add the mustard seeds and a crushed clove of garlic. Cook gently until brown.

  5. Drain the vegetables then add the mustard seeds and garlic to the sambar.
