Salmon Tikka

Ingredients:

400g of salmon fillets

3 cloves of garlic

1 inch (3 cm) of ginger

Small bunch of fresh coriander

2 red chillies (spicy ones!)

2 tablespoons of tomato puree  

Serves: 4​

2 teaspoons of garam masala

1 teaspoon of chilli powder

8 almonds

2 tablespoons of olive oil

½ lemon

Preparation

  1. Dry fry your almonds without oil for 4 minutes.

  2. Chop the garlic, ginger, coriander, your toasted almonds and chilli.

  3. Paste all ingredients in a pestle and mortar or a food processor.

  4. With care cut each salmon fillet lengthways into 3 strips and spread each with a layer of your paste, rubbing it all over.

  5. Heat your frying pan at medium heat and add your    salmon strips. Cook for 2-3 minutes each side, depending on how you like your salmon.

  6. Add a squeeze of lemon for taste and serve with a Crunchy Salad.
