Roasted Cauliflower with Indian Spices & Yoghurt


1 large cauliflower 
4 tbsp olive oil
1 tsp salt
½ tsp freshly ground black pepper 
1 tsp turmeric
1 tsp ground cumin 
1 tsp sambar powder

Serves: 4  

150ml natural low fat yoghurt 
1 tbsp fresh dill 
1 tbsp fresh mint 
1 tbsp parsley
½ tsp ground cumin
pinch of salt 


  1. Preheat the oven to 200°C (gas mark 6).

  2. Break the cauliflower into florets, and place in a deep bowl.

  3. In another bowl mix the seasonings and spices with olive oil. Pour over the cauliflower and mix well to cover.

  4. Spread the cauliflower on a large baking dish and bake for 30-40 minutes until the cauliflower begins to brown, moving the cauliflower from time to time so it doesn’t stick.

  5. Combine the dressing ingredients.

  6. When the cauliflower is cooked transfer it to a serving plate and pour over the dressing.
