Roasted Cauliflower with Indian Spices & Yoghurt
Ingredients:
1 large cauliflower
4 tbsp olive oil
1 tsp salt
½ tsp freshly ground black pepper
1 tsp turmeric
1 tsp ground cumin
1 tsp sambar powder
Serves: 4
Dressing:
150ml natural low fat yoghurt
1 tbsp fresh dill
1 tbsp fresh mint
1 tbsp parsley
½ tsp ground cumin
pinch of salt
Preparation

Preheat the oven to 200°C (gas mark 6).

Break the cauliflower into florets, and place in a deep bowl.

In another bowl mix the seasonings and spices with olive oil. Pour over the cauliflower and mix well to cover.

Spread the cauliflower on a large baking dish and bake for 30-40 minutes until the cauliflower begins to brown, moving the cauliflower from time to time so it doesn’t stick.

Combine the dressing ingredients.

When the cauliflower is cooked transfer it to a serving plate and pour over the dressing.
