Mooli and Aubergine Curry

Ingredients:

1 medium sized mooli (radish)
1 aubergine 
1 onion, chopped 
1 tomato, chopped
1 tbsp olive oil 
1 crushed green chilli

Serves: 4​

2 tsp cumin seeds 
1 tsp salt 
½ tsp turmeric powder 
1 tsp garam masala 
Fresh coriander leaves

Preparation

  1. Peel and cut the mooli into thin slices and chop the aubergine into 2 cm cubes.

  2. Heat the oil in a non-stick pan, add the cumin seeds and onion and brown gently.

  3. Add the spices and then the mooli, aubergine and tomato. Mix well.

  4. Cook on a low heat until soft. Serve with fresh coriander.
