Madras Fish Curry
Ingredients:
4 cod or haddock steaks
(approx. 150g each)
1 medium onion, chopped
2 cloves of garlic
2.5cm ginger, chopped
2 tbsp vinegar
1 tbsp olive oil
½ tsp cumin seeds
Serves: 4
½ tsp fennel seeds
½ tsp ground coriander
½ tsp ground cumin
½ tsp turmeric
2 tomatoes, chopped
1 tsp garam masala
Salt and black pepper
200ml water
Preparation

Put the onion, ginger, garlic and vinegar in a food processor and blend to a smooth paste.

Heat the oil in a large non-stick pan over a medium heat. When the pan is hot, add the cumin and fennel seeds and cook for 3-4 minutes.

Pour in the paste from the food processor and fry for 10 minutes, stirring regularly.

Add the coriander, turmeric and cumin and continue stirring for approximately 1 minute.

Next add the tomatoes, garam masala, salt and freshly ground pepper. Continue cooking for about 3 minutes.

Stir in the water and bring to the boil. Cover the pan and simmer gently for about 20 minutes.

Place the fish in the pan, making sure each piece sits separately in the pan. Spoon the sauce mixture over the fish and simmer gently for 10-15 minutes until the fish is cooked through.

Serve with rice and salad.
