Mackerel with Potatoes

Ingredients:

2 Large filleted mackerel
Fresh parsley

2 tbsp cider vinegar    

For the potatoes:
2 potatoes 
1 spring onion, chopped 

3 cloves of garlic

Serves: 4​

Olive oil

Coarse sea salt

Preparation

  1. Season the filleted fish with a little sea salt and place in a baking dish. Add some olive oil and roast for 10 minutes at 180°C. 

  2. To prepare the potatoes. First peel and cut into thin slices. In a pan, fry the potatoes in oil with garlic and chopped onion. When the potatoes are cooked spread them onto a large plate and put the fish on top.

  3. Scrape the garlic and remaining oil from the pan and sprinkle over the fish. Garnish with parsley and a little vinegar.

  4. Serve with a simple green salad.
