Garden Spaghetti

Ingredients:

300g spaghetti 
1 spring onion
2 ripe tomatoes
1 courgette
1 green pepper

Serves: 4​

2 cloves of garlic 
20 ml olive oil 
Ground black pepper
Salt

Preparation

  1. Cook the pasta in boiling salt water for 8 minutes, then drain and cool it under cold running water. Set aside leaving it in the water to stop it sticking together.

  2. Put the tomatoes in boiling water for 2 minutes until the skins split. Then peel and chop them.

  3. Cut the courgette into small similar sized cubes. Chop the peppers and onions.

  4. Peel and chop the garlic.

  5. Heat the oil in a large saucepan and sauté the onions gently until soft. Add the pepper, courgette, tomatoes and garlic and cook gently for 15 minutes, over a low heat.

  6. Season with salt and black pepper, according to taste.

  7. When the vegetables are cooked, add the spaghetti. Mix and heat gently for five minutes.

  8. Serve hot.
