Frittata

Ingredients:

2 eggs
½ red onion
3 small mushrooms
150g spinach

Serves: 2​

1 tsp olive oil
30g feta or cheddar cheese
Black pepper

Preparation

  1. Slice the onion and mushrooms and place them in a bowl. 

  2. In another bowl, break the eggs and whisk. Season with black pepper and crumble in the cheese. 

  3. Place the grill on medium heat. 

  4. Heat up your frying pan, add in the oil and then the onions and mushrooms. Cook for 5 minutes on a medium heat. 

  5. Take the onion and mushroom mixture off the heat and place in the bowl with the eggs. Give it a good mix. 

  6. Pour the mixture into the pan and back onto low heat. 

  7. Once the sides have firmed up place the frying pan under the grill to get a golden-brown top.
