Farmer's Salad

Ingredients: 

1/4 lettuce

1 bunch watercress

2 large salad tomatoes

Few chive leaves

1 red pepper

2 boiled eggs

Serves 4

100g mozzarella cheese

1 sprig fresh parsley

1 tbsp apple cider vinegar

2 slices wholegrain bread

2 tbspb olive oil

Salt to taste

Preparation

  1. Chop the washed lettuce, watercress, tomatoes and peppers.

  2. Peel and chop the boiled eggs into quarters. Cut the mozzarella cheese into slices.

  3. Make a vinaigrette dressing with the olive oil, vinegar, salt and chopped parsley.

  4. Divide between the plates, add some mozzarella to each and break up some of the crusty bread, sprinkling it over each salad.​
