Chicken, Hazelnut and Peach Salad
Ingredients:
3 peaches
2 tbsp balsamic vinegar
8 cups fresh spinach
Large bunch fresh parsley
2 boneless chicken breasts
Serves 4
75g hazelnuts
3 tbsp olive oil
Salt pepper to taste
Preparation

Dice the chicken breast, season and cook in a pan with 1 tbsp olive oil.

In a medium salad bowl, whisk together the remaining oil and vinegar. Add the peaches, hazelnuts and parsley.

Season with salt and pepper, and toss to coat. Add the spinach leaves and toss again. Taste and adjust the seasoning.

Slice the chicken breasts and add on top of the salad.
