Avocado and Papaya Salad

Ingredients: 

4 avocados

2 baby gem lettuces

1 clove of garlic (crushed)

2 handfuls cherry tomatoes

½ tsp freshly ground pepper

4 papayas (peeled, halved and seeded)

1 small red onion (finely diced)

Serves 4

2 limes (zested & juiced)

60ml olive oil

½ tsp cayenne pepper

Preparation

  1. Slice the avocado lengthways into ½ inch slices. Slice papaya width-wise into ½ inch slices. Drizzle with juice of one lime immediately.

  2. Arrange the slices overlapping and alternating on a bed of baby gem lettuce. Chop the tomatoes in half and add to the plate with the onions.

  3. Combine the remaining ingredients, mix well, spoon over the salad and eat immediately.
